Ciao Matteo famiglia, we miss you so much! We would do anything to share a bowl of our Carbonara with you all for #WorldCarbonaraDay today. Instead, we thought we'd share our special recipe so you can treat yourselves at home!
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Downtown Spaghetti Carbonara (Serves 4)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️500g of spaghetti (or fresh egg pasta)
▪️200g guanciale, finely chopped
▪️1 tbsp oil
▪️100g pecorino, finely grated
▪️200g parmigiano reggiano, finely grated
▪️4 egg yolks
▪️Salt and Pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Steps: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
▪️Bring 5L of water to the boil, add salt to your liking and cook until al dente
▪️Heat oil in a frypan over medium-heat. Gently sweat the guanciale, stirring until beginning to crisp. Set aside a spoonful of guanciale for garnish
▪️With the remaining guanciale, scoop a couple of ladles from the salted boiling water to your saucepan - making sure you scoop the foam (this will emulsify with the pork)
▪️Reserving some of the cooking water, drain and add the spaghetti. Toss well over the heat so that it soaks up all the flavour!
▪️Add a splash of cooking water and toss well, season with pepper. Slowly add in the pecorino and parmigiano reggiano, tossing occasionally until it's nice and glossy
▪️Serve pasta amongst bowls, garnish with guanciale and top with egg yolks. Serve with an extra twist of pepper!
▪️Mix through the egg yolk at the table ⠀⠀⠀⠀⠀⠀⠀⠀⠀

In line with government orders and for the safety of our guests and our staff, we have decided to close all venues. It is currently unknown when we will reopen. At this stage, we will no longer be offering take away at either venue. •
Look after yourselves and those around you. Stay safe, stay healthy and please, listen to the advice of the experts so that this nightmare ends soon. •

Matteo Double Bay remains OPEN as normal ❤️ In line with advice and recommendations from the Government and Department of Health, we will be spacing tables in our three separate areas of the restaurant to allow for social distancing, and have introduced a number of additional cleaning practices to reduce risk and support a safe environment. This is a crazy time for everyone, but we hope to bring some love and warmth to your day with a freshly cooked meal by our beautiful team at Matteo. See you soon!
